There are days when I have all the time in the world to get meals prepared, but there are the occasional days, which seem to happen more and more, where I need a quick, but still non-fast food option to eat. I’ve really been trying to watch the amount of times we are eating dinner outside the house and that also means that I need to come up with more meal recipes. I don’t know about you, but I get tired of the same meals on repeat, week after week.
Since I’ve started to really watch what I’m putting in my body, I’ve become more aware of the food I want to stay away from. Now, I love me a Taco Tuesday night. Is there anything better? The bad thing, is I could eat all of those greasy tacos loaded up with cheese and sauce and be in heaven, BUT I’m trying to be better than that. So I came up with the Grilled Chicken Tacos w/ Mago Salsa dinner to give me a Taco that was fulfilling, but also tasted just as good, if not better, than the greasy tacos I used to enjoy so much. I’m pretty sure I succeeded. Plus, this is also a great meal that can be made ahead of time and served for dinner super quickly!
